Recently, I discovered this lovely recipe for some scrumtous and gorgeous chocomint cupcakes! It's quite easy to make with a convection toaster oven and will yield two dozen cukcakes...that's more than enough for anyone with a sweet tooth!
To make the cupcakes, you're going to need a cup of sugar, ¾ cup of cocoa powder, 1 and ½ cup of flour, ¾ teaspoon of baking power, half a teaspoon of salt, 2 eggs, 1/3 cup of vegetable oil, 2 tablespoons of mint extract, ½ cup of sour cream and a spoonful of vinegar. For extra sweetness, you can add a cup of chocolate chips.
First, preheat your oven at 350°F and line your muffin pans with paper liners.
Then, combine all of the dry ingredients in a large bowl. In a separate bowl, combine all the liquid ingredients with the two eggs. Slowly, add the wet mixture into the dry one, mixing until it is smooth. You may opt to do this by hand or to use a mixer.
Finally, fill your muffin tray with the batter and bake it for 25 minutes. Once it is ready, let it cool for about another 10 minutes and enjoy. |
